Heat your Blackstone griddle over medium-high heat.
Add the ground beef, Cook until the beef is browned and no longer pink on the inside. Sprinkle Taco seasoning over ground beef.
Stir in the black beans, diced tomatoes, and taco seasoning. Cook for another 5 minutes to let the flavors combine. (optional)
Spread a layer of tortilla chips on the griddle. Top with the beef mixture and shredded cheese.
Cover the griddle with a lid or foil to melt the cheese. This should take about 5 minutes.
Once the cheese is melted, remove the nachos from the griddle and serve hot with your favorite toppings like jalapeƱos, sour cream, guacamole, and salsa.
