Ingredients
6stripsfully cooked bacon
8flourtortillas
8largescrambled eggs
8tablespooncolby jack cheese
2cups frozen shredded hash browns
Instructions
Heat your Blackstone griddle over medium heat and spray with cooking spray.
In a bowl, whisk the eggs and season with salt and pepper. Pour onto the griddle and scramble until cooked through.
Push the eggs to one side of the griddle and add the bell peppers, onions, and tomatoes. Cook until the vegetables are tender. This is optional if you have any veggies you want to add to them. Add the cooked bacon, cheese, and cilantro to the egg mixture and stir to combine.
Warm the tortillas on the griddle for a few seconds on each side.
Divide the egg mixture among the tortillas, roll them up, and serve hot.
Notes
Any type of non stick skillet over a stove top will work just fine if you don't have a Blackstone.
