Blackstone Breakfast Burritos

Blackstone Breakfast burritos are great for meal prepping and they are also great to store in your freezer.  The potatoes, eggs, and bacon just need to be prepped and cooked prior to assembling the burritos. I’m not a fan of cooking bacon in a skillet because of all the grease splatter and I will use the microwave or oven. This is just a base recipe for a breakfast burrito. Feel free to add whatever veggies you like.

My mornings are pretty busy so I’ll make these for a late brunch and have them with some fruit on the side.  I’m also a fan of having breakfast for dinner when I don’t know what to make.

Ingredients Needed for Blackstone Breakfast Burritos

  • Flour Tortillas   -  Points for breakfast burritos will vary depending on what brand tortilla you use. The WW app has a barcode scanner that comes with which scans the bar codes and automatically brings up the points for each item. 
  • Eggs  - To make zero-point scrambled eggs, I always make them without any extra fat. Just nonstick cooking spray. 
  • Hash Browns - If you follow the purple plan on WW, Ore Ida Shredded Hash browns (the shredded or square size) are 0 points. So these burritos are pretty low in points for this plan. 
  • Bacon - If you don’t like bacon brown sausage can also be used. 
  • Cheese -  Use whatever cheese you like for these burritos. I like Colby Jack cheese or cheddar. 
  • Vegetables - I’d make some pico de gallo and chop up some avocados to go inside them. Black Beans would also make a great addition. For this picture, I didn’t add any veggies, just had them plain.

How to make Breakfast Burritos 

  1. Heat your Blackstone griddle over medium heat and spray with cooking spray.
  2. In a bowl, whisk the eggs and season with salt and pepper. Pour onto the griddle and scramble until cooked through.
  3. Push the eggs to one side of the griddle and add the bell peppers, onions, and tomatoes. Cook until the vegetables are tender. This is optional if you have any veggies you want to add to them. Add the cooked bacon, cheese, and cilantro to the egg mixture and stir to combine.
  4. Warm the tortillas on the griddle for a few seconds on each side.
  5. Divide the egg mixture among the tortillas, roll them up, and serve hot.
