Ingredients Needed

  • Shrimp (peeled and deveined),
  • Rice noodles - are a staple in many Asian cuisines and are loved for their delicate texture and ability to soak up flavors in dishes.
  • Eggs - The best type of eggs you can buy at the store are organic or free-range eggs, while others may prefer eggs from specific breeds of chickens
  • Bean sprouts - Fresh bean sprouts have been hard to find lately at the grocery stores here in this town. You can always use canned bean sprouts.
  • Chopped peanuts - freshly chopped
  • Chopped green onions - these slender, green-topped onions have a mild flavor that is less pungent than regular onions, making them perfect for adding a fresh and subtle onion taste to dishes.
  • Chopped cilantro - also known as coriander or Chinese parsley, is a popular herb used in many cuisines around the world.
  • Pad Thai Sauce - I cheated and used a bottle of Pad Thai Sauce for this. It's quicker than making your own.

How to Make Pad Thai on a Griddle

Step 1: Start by soaking the rice noodles in warm water until they are soft. Follow the directions on the back of the box.

Step 2: Add the shrimp to the griddle on high heat and cook until they are pink and cooked through. Add the bean sprouts, cilantro, and scallions,

Step 3: Push the shrimp and veggies to the side and crack the eggs onto the griddle, scrambling them until cooked.

Step 3: Next, add the softened rice noodles to the griddle along with the sauce. Toss everything together until well combined.

Ingredients

  • 8 oz rice noodles
  • 1 lb shrimp
  • 2 large eggs
  • 1 cup bean sprouts
  • ½ cup chopped green onions
  • ½ cup chopped cilantro
  • ¼ cup vegetable oil
  • ¼ cup pad thai sauce
  • 1 lime

Instructions

  • Soak the rice noodles in hot water for about 8-10 minutes until they are soft. Drain and set aside.Heat the Blackstone griddle to medium-high heat and add the vegetable oil.
    Add the protein of your choice and cook until browned.Push the protein to one side of the griddle and crack the eggs onto the other side. Scramble the eggs until cooked, then mix them with the protein.
    Add the bean sprouts, cilantro, and green onions to the griddle. Stir-fry for a few minutes until the vegetables are slightly softened.Add the drained noodles to the griddle along with sauce. Toss everything together until well combined and heated through.Squeeze the lime over the Pad Thai and mix well. Serve hot, garnished with chopped peanuts and a drizzle of Sriracha sauce if desired.
